ETH Zurich boils whey protein into fibrils, coats them in single iron atoms and adds gold nanoparticles and glucose. The gel turns alcohol into acetic acid in the gut before it reaches the blood. All the results are in mice. The researchers already filed a patent and say they are “confident” human trials will succeed, which is a sentence nobody should write before running them.
